Tasting Holobionts: microbes’ power to create delicious sustainable foods
Tasting Holobionts is an event where we will delve into how microbes shape an essential part of our lives - our food. Many foods, from fish to ferments, rely on microbes to grow and be delicious. Together we explore holobionts, which represent the relationship between microbes and food, and how they make our food healthy, sustainable, and flavourful.
Come and join us on April 24th at 18.00-20:30 at the Henrik Dam Auditorium, Mærsk Tower, for talks, an expert panel discussion, and delicious tasters that will pamper your senses.
In an excellent selection of short talks, you can learn about the microorganisms embedded in our daily diet, experience for yourself how microbes transform food, and discover how these foods support a healthy microbiome
Speakers and talks include:
- David Zilber, “Fermented Foods - The Extended Holobiont”. David is an expert fermenter at Novonesis and author of the New York Times best-seller, The Noma Guide to Fermentation.
- Leonie J. Jahn, “Cherishing Biodiversity in Fermented Foods” Leonie is an Associate Professor, at the Novo Nordisk Center for Biosustainability, DTU
- Joshua Evans, “The Science and Art of Holobiont Hand Taste” Joshua is an Associate Professor at the Novo Nordisk Center for Biosustainability, DTU
- Morten Limborg, “Microbes, Holobionts, and Sustainable Agriculture and Fisheries”. Morten is an Associate Professor at the DNRF Center for Evolutionary Hologenomics (CEH) at Copenhagen University
The short talks will be followed by panels discussion of questions from the audience.
After the talks, you will have the opportunity to taste ferments, learn about traditions, and talk with the researchers outside the auditorium: Visit tables where you can see and smell active ferments transforming food, observe the microbes at work, and taste delicious ferments. Our researchers will also present edible insects and explain how they are a more sustainable alternative protein source.
